Apple Sausage Stuffing Recipe

Description

Once you take a bite of this savory apple sausage stuffing you’ll think you went to Thanksgiving heaven! This is not your ordinary sausage stuffing. It’s one of those scrumptious recipes that’s truly memorable.


Ingredients

  • 1pound of breakfast sausage (not sausage links)
  • 2 sticks butter (1 cup)
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 large Granny Smith apple, chopped
  • 2 large eggs
  • 2 teaspoons fresh thyme, minced
  • 2 teaspoons fresh sage leaves, minced
  • 1/4 cup fresh parsley leaves, chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 3 cups chicken stock (or chicken broth)
  • 16 cups good-quality stale bread, cubed and lightly toasted in the oven on a baking tray

Instructions

  1. Generously butter a large baker or casserole dish. Preheat your oven to 375 degrees.
  2. In a medium skillet, cook the pork sausage all the way through. As you cook it, use a wooden spoon or spatula to break up the sausage into small pieces. Once the sausage is cooked and browned, drain off the fat and set the pan aside.
  3. In a small bowl, whisk the two eggs. Add in the thyme, sage, parsely, salt and pepper. Briefly whisk again until combined. Set the bowl aside.
  4. In a deep, large saute pan, melt one stick of butter over medium heat. Add in the onion, celery, and apple. Saute for 5-7 minutes or until the ingredients are tender but not limp. Turn off the heat.
  5. Add the cooked sausage to the deep saute pan and mix it together with the veggies and apples. On top of that, add in the toasted bread cubes. Pour the egg/spice mixture on top. Drizzle the chicken stock over everything. Gently fold all of the ingredients together until combined.
  6. Transfer the apple sausage stuffing to the buttered baking dish. Slice up the second cube of butter. Dot the top of the stuffing with the slices of butter. Cover the baker with foil and put it in the oven. Bake for 30-35 minutes with the foil covering. Remove the foil covering and gently toss the stuffing. Bake the stuffing uncovered for another 15-20 minutes, or until it’s a beautiful golden brown on top. The sausage stuffing should be lightly crisp on top and lightly moist in the center.

Notes

MAKE-AHEAD STUFFING RECIPE: For a make-ahead side dish, after dotting the top of the sausage stuffing with pats of butter, cover the baking dish and refrigerate the stuffing until the next day. Two hours before serving time, remove the apple sausage stuffing from the refrigerator and set it on the countertop for one hour to bring it to room temperature. Then bake this Thanksgiving side dish according to the recipe instructions.
