What’s awesome about this easy no-churn ice cream recipe, is you don’t need a specialized machine to make it. All you need is a stand mixer a simple metal loaf pan or an insulated ice cream tub if you have one.

To give cake batter ice cream a true birthday cake flavor we do several things. For the base of this dessert we use heavy whipping cream, pure vanilla extract and sweetened condensed milk. But to achieve authentic birthday cake flavoring we don’t stop there.

To make sure the funfetti ice cream tastes just like birthday cake, we sprinkle in crumbs from a vanilla cake along with funfetti sprinkles. Then we top off the birthday cake ice cream mixture with a layer of tasty vanilla frosting.

  • Heavy Whipping Cream: This ingredient must be used straight from the fridge so it’s very cold. When heavy cream is whipped it becomes whipped cream with a light and fluffy texture. It’s a primary ingredient for this delicious birthday cake ice cream.
  • Pure Vanilla Extract: Enhances the flavor of the other ingredients. Vanilla is important to use for true birthday cake flavor.
  • Sweetened Condensed Milk: This ingredient comes in a can. It is NOT the same as evaporated milk. It provides the thick creamy texture and irresistible rich mouthfeel we come to expect from cake batter ice cream. It also adds sweetness to this yummy no-churn dessert.

RECIPE STEPS

RECIPE PREP: Chill the metal bowl and whisk of a stand mixer in the freezer for 15 minutes. Line a metal 9×5 loaf pan with 2 layers of parchment paper. Stick the pan in the freezer to chill for at least 15 minutes.

  • STEP 1: Add cold heavy cream and vanilla extract to the chilled bowl of a stand mixer fitted with the whisk attachment. Beat on medium speed for 2 to 3 minutes, or until stiff peaks form.
  • STEP 2: Add sweetened condensed milk to the bowl. With a rubber spatula, gently fold it into the whipped cream. Take care not to deflate the whipped cream during this folding process. Be gentle.
  • STEP 3: Transfer half of the ice cream base to the prepared loaf pan. Sprinkle half of the chopped vanilla cake and half of the funfetti over the top. With a spoon, dollop half of the frosting over the surface. Add remaining ice cream base to the pan, gently spreading it into an even layer. Top with remaining cake, funfetti sprinkles and frosting.
  • STEP 4: Gently swirl the frosting into the ice cream base – just until lightly mixed. Tightly wrap the pan in 2 layers of plastic wrap. Freeze overnight (or for at least 6 hours) until the birthday cake ice cream is completely set with a scoopable texture.

PREVENT FREEZER BURN: After the ice cream has set, unwrap the pan and place a piece of parchment paper directly over the surface to block out air. Re-wrap loaf pan in a double layer of plastic wrap and return to the freezer.

Instructions
