Cajun Crab Dip

Description

This rich creamy crab dip is filled with crab meat, melted cheese, crisp green onions, a burst of lemon, and authentic Cajun flavor. It’s a perfectly balanced dip that earns its place on the appetizer table.


Ingredients

  • 1 package (8-ounce block) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 lemon (1 tablespoon), juiced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Crystal hot sauce, or more to taste
  • 1 pinch kosher salt, or to taste
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 cup shredded Colby Jack cheese, divided
  • 1/4 cup thinly-sliced green onions, plus more for garnishing
  • 8 ounces crab meat (see recipe notes below)

Instructions

RECIPE PREP: Preheat oven to 350°F. Grease an 8-inch baking dish with non-stick cooking spray.

  1. In a large bowl, add softened cream cheese, sour cream, lemon juice, Cajun seasoning, and hot sauce. Stir until blended. Sample the mixture. Add kosher salt to taste.
  2. Add in 1/2 cup each Monterey Jack cheese and Colby Jack cheese. Sprinkle in the green onions. Mix to combine. Add crab meat to the bowl. Gently mix to incorporate. Do a taste test. If needed, adjust the seasonings: Cajun seasoning, hot sauce and kosher salt.
  3. Transfer the mixture to the prepared baking dish. With the back of a spoon, level out the top so it’s a smooth even layer. Sprinkle the remaining cheese over the surface.
  4. Bake uncovered for 30 to 35 minutes, or until the cheese has melted and the dip is hot and bubbling. Garnish with sliced green onions. Serve with tortilla chips, water crackers or sliced baguette. Enjoy immediately or within the hour.

Notes

What type of crab meat to use? Fresh crab is always best. For large pieces of crab, use jumbo lump. For a more subtle crab taste, use lump crab (which is also easier on the budget compared to jumbo lump). For crab meat that almost melts into the dip, use claw meat or “crab special”.

About cheese: Pre-shredded cheese has additives that prevent the strands of cheese from sticking together. These additives also prevent the cheese from melting smoothly. It’s always best to buy a block of cheese and shred it by hand on a metal grater.
