Cheesy Rotel Bean Dip Ingredients
The simplicity of this Mexican bean dip recipe is just fabulous. It’s one of those masterpieces that you can whip up in a pinch and walk away from your kitchen feeling like Martha Stewart. These are all the ingredients you’ll need to make this popular cheesy Rotel bean dip: one 30-ounce can of refried beans (I use vegetarian refried beans), one 8-ounce block of cream cheese chopped up into small cubes, 2 cups of shredded colby-jack cheese (or you can use half Monterey jack and half cheddar), and one 10-ounce can of Rotel Diced Tomatoes & Green Chilies. To garnish the bean dip you’ll need: one additional cup of shredded colby-jack cheese, 2 thinly sliced green onions, 1/4 cup sliced black olives, and a handful of chopped grape tomatoes. Completely optional: slices of pickled jalapeno peppers (from a can) transferred to a bowl that’s sitting on the sidelines.
Best Refried Bean Dip Recipe
In a medium-sized pot, add the refried beans, the cream cheese, two cups of the shredded colby-jack cheese, and the Rotel tomatoes with all the juices. Mix and stir these ingredients together over medium heat until the cheese has completely melted in, and the mixture is hot and yummy. Take one or two tortilla chips and taste the bean dip. Mmmm…what do think? Super delicious, right? It’s so good it needs no extra spices.
Put the Finishing Touches on Your Cheesy Rotel Bean Dip
With a heat-safe silicone spatula, transfer the bean dip to a medium-sized baking dish. For serving my appetizer today, I chose a lovely vintage quiche dish that I purchased from an antique store. Sprinkle the remaining cup of shredded colby-jack cheese on top of the bean dip. Gently place the baking dish into the oven. Broil the cheesy Rotel bean dip for just a few short minutes until the cheese on top is completely melted.
Generously garnish your cheesy Rotel bean dip with sliced green onions, chopped grape tomatoes, and sliced black olives. I love how super festive this looks. And the smell and taste is mouthwateringly fabulous!
Serve with long crunchy tortilla strips, corn chips designed for dipping, or your favorite restaurant-style tortilla chips. This bean dip is also great when served with saltine crackers and a variety of freshly sliced veggies.
Another serving option for Game Day parties: transfer the cheesy Rotel bean dip to a crockpot and set it on “low” to keep it warm. Place all the garnishes in separate little bowls alongside the tortilla chips. Your family and friends can ladle the bean dip onto a layer of chips and then sprinkle the yummy garnishes right on top!

Ingredients
- 1 30-ounce can refried beans
- 1 8-ounce block cream cheese, cut into small cubes
- 3 cups colby-jack cheese (or half Monterey Jack and half cheddar), shredded
- 1 10-ounce can Rotel Diced Tomatoes & Green Chilies

- 2 green onions, thinly sliced
- 1/4 cup sliced black olives
- 1 handful grape tomatoes, chopped
Instructions
- In a medium pot, add in the refried beans, cream cheese, 2 cups of the shredded colby-jack cheese, and the Rotel tomatoes with all the juices from the can. Continuously stir over medium heat until the cheese is fully melted, all ingredients are incorporated, and the bean dip is hot.
- Transfer the hot bean dip to a medium-sized baking dish, or to an oven-safe appetizer dish. Sprinkle the remaining cup of shredded colby-jack cheese over the top of the bean dip. Put the appetizer into the oven and broil briefly just until the shredded cheese on top is completely melted.
- Garnish with green onions, black olives, and chopped tomatoes. Serve hot or warm.
Notes
PARTY TIP: After melting the beans, cheese and tomatoes, transfer the bean dip to a crockpot set on “low”. Next to the crockpot arrange all the garnishes in small dishes along with a large bowl of tortilla chips. Party guests can ladle the bean dip over chips, as desired, and sprinkle the garnishes on top.
