PORK LOIN MARINADE
Whisk up this delicious sweet and spicy marinade in less than 5 minutes!
- STEP 1: Pull out a small mixing bowl and whisk. Gather together all the ingredients for the grilled pork marinade.
- STEP 2: One by one, add the marinade ingredients to the bowl. As you add the hot sauce, go slowly. Add 1/4 teaspoon at a time, tasting the mixture after each addition to make sure it isn’t spicier than you’d like! Whisk well.
- STEP 3: Remove the meat from the wrapper. To make slicing the strips easy, cut the pork loin in half width-wise. Use a sharp knife to cut long thin strips (length-wise). Cut the strips as thinly as possible!
- STEP 4: Add the pork loin strips to a gallon-size zip-top bag. Roll down the sides a bit to give the bag more stability on your countertop. Reserve 1/2 cup of the marinade for drizzling during serving, or as a dipping sauce. Pour remainder of the pork marinade over the meat. Zip up the kitchen bag and refrigerate for 1 – 4 hours. If you marinate the meat overnight, the pork kabobs will be even more flavorful!
HOW TO COOK PORK LOIN
- STEP 1: Thread the marinated meat onto the skewers. Add two pork strips to each kabob. Place the skewers on a tray and brush them with marinade.
- STEP 2: Brush a bit of oil on the grill to prevent the meat from sticking.
- STEP 3: Place the pork loin kabobs over medium heat. Brush them with marinade again, and then discard the marinade.
- STEP 4: Grill for 2 minutes on the first side. Flip them over and grill another 2 minutes. Continue flipping and grilling until they’re done. For food safety use a meat thermometer to check the internal temperature. The National Pork Board recommends cooking pork loin to at least 145˚F, and then letting it rest for 3 minutes before serving.
HOW TO GARNISH GRILLED PORK LOIN SKEWERS
- Transfer pork kabobs to a serving platter.
- Drizzle reserved marinade over the meat, or serve it on the side as a flavorful dipping sauce!
- Lightly sprinkle the kabobs with coarse salt, freshly-ground black pepper, and chopped parsley. This provides additional color, taste and texture.
- Surround the grilled kabobs with juicy wedges of lime!

- HOW TO MAKE SLICING PORK LOIN EASY: Place the package of pork loin into the freezer for 45 minutes. Having the meat just a little bit stiffer makes it much easier to slice it into very thin strips.
- HOW TO PREVENT WOODEN SKEWERS FROM SCORCHING: Soak wooden skewers for an hour or longer. This is a must! It helps prevent them from burning and falling apart on the grill.
- HOW TO PROPERLY SKEWER PORK KABOBS: Start by piercing one end of the meat with the skewer. Continue to lace the meat onto the skewer in one-inch increments. It’s a little like sewing! Make sure the meat is not all clumped together on the kabob. Spread it out! The surface of the meat should be able to touch the grill when cooking.
- INCREASE THE FLAVOR: Allow the kabobs to rest for 5 minutes before serving so the juices have time to be reabsorbed into the center of the meat. Squeeze a bit of lime juice over the entire batch. Lightly sprinkle an extra bit of coarse salt and pepper over the top.

Instructions
