During cold weather months, and for St. Patrick’s Day celebrations, scrumptious Guinness Shepherd’s Pie is the perfect comfort food! This delicious Irish food recipe is easy to make with readily-available ingredients. The twist on this Shepherd’s Pie is the addition of Irish Guinness beer! However, if you’d don’t have a bottle of Guinness on hand a quick and easy substitute is an extra 1/2 cup of beef broth. So get your green on and get ready to enjoy a famous Irish staple: Guinness Shepherd’s Pie.

Guinness Shepherd’s Pie


Description

This traditional Guinness Shepherd’s Pie is a family favorite! It’s easy to make, and is perfect for St. Patrick’s Day and all year round. This is the ideal comfort food recipe for cold-weather days!


Ingredients

INGREDIENTS FOR MASHED POTATOES

  • 11/2 pounds russet potatoes
  • 4 tablespoons butter
  • 1/4 cup half & half milk
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

INGREDIENTS FOR MEAT FILLING

  • 2 tablespoons vegetable oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, pressed or minced
  • 11/2 pounds ground round
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 teaspoons tomato paste
  • 1/2 cup Guinness Irish Beer
  • 1/2 cup beef broth (or chicken broth)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 2 cups frozen vegetable medley, thawed (corn, peas, carrots, green beans)
  • Optional Garnish: sprig of fresh thyme

Instructions

INSTRUCTIONS FOR MASHED POTATOES

  1. Wash and peel the potatoes. Cut them in fourths. Place them in a medium pot and cover with cold water. Boil over medium-high heat until fork tender. (Note: While the potatoes are boiling, prepare the meat filling.) Remove potatoes from the boiling water with a slotted spoon. Transfer them to the bowl of a stand mixer.
  2. Immediately add melted butter and mash very briefly on low speed. Gradually pour in half & half while the mixer is still on. Process briefly. Do not over-mix or the potatoes they will have a gummy texture. Stop the mixer and add salt, pepper and cheese. Mix until just incorporated.

INSTRUCTIONS FOR MEAT FILLING

  1. Adjust oven rack to the center position. Preheat oven to 350 degrees.
  2. Heat oil in a saute pan over medium heat. Once the oil flickers in the pan, add the onion. Saute until golden brown. Add garlic and continue to saute until fragrant. Add ground round, salt and pepper. Cook until beef is completely brown with no more pink. Sprinkle flour on the meat and fold it into the mixture.
  3. Add in the tomato paste, Guinness beer, beef broth, Worcestershire, rosemary, and thyme. Stir to combine. Bring meat filling to a brief boil, then reduce the heat to low. Cover the saute pan with a lid. Let the mixture simmer for about 12 minutes or until the sauce is lightly thickened.

ASSEMBLING THE GUINNESS SHEPHERD’S PIE

  1. Fold the vegetable medley into the meat mixture until combined.
  2. Transfer meat filling to an 8 X 8-inch baking dish. Use a spatula to spread the mixture evenly over the bottom. With a clean spatula, spread the mashed potatoes over the top of the meat mixture. Around the edges of the dish, make sure the potatoes form a nice seal to prevent overflowing while baking.
  3. Put baking dish on a baking tray lined with parchment paper to catch any overflow. Put the Shepherds Pie in the middle of the oven to ensure good heat circulation.
  4. Bake for 25 minutes or until the potatoes become lightly golden.
  5. Remove the Guinness Shepherds Pie from the oven. Transfer to a trivet and allow it to cook for 15-20 minutes before serving. If desired, garnish with a sprig of fresh thyme.

  1. I have made your Shepherds Pie many times over the past few years! My father is British and my mother asked my grandmother how to make it for my dad when she visited us in Texas many years ago. She replied, “Shepherds Pie?! That’s peasant food!” 😂 She did teach her and it was something that was out of the ordinary in Texas in the 80’s. I love the addition of the Guinness Beer and even add a little more. Then my husband and I split the rest of the beer and do a little toast to Ireland, our favorite vacation spot!
