For Mini Brownie Bites
- Butter: Provides the brownie batter with a rich buttery flavor.

- Baking Powder: A leavening ingredient that allows the brownies to rise in the oven.
- All-Purpose Flour: Provides strength and structure for the brownie batter.
For Chocolate Frosting
- Butter: The rich buttery base for our chocolate frosting.
- Powdered Sugar: An important ingredient for making frosting. It adds the perfect amount of sweetness, thickness and texture.
- Cocoa Powder: Provides a delicious chocolate taste. You can use the same dark cocoa you used for the brownies, or a light colored cocoa like Hershey’s cocoa natural unsweetened.
- Kosher Salt: Balances the flavors of the frosting while tamping down sweetness.
- Heavy Cream: Adds rich delicious moisture so the frosting’s not too thick.
- Pure Vanilla Extract: Enhances the flavor of the other ingredients while also providing a fabulous bakery aroma.
- Halloween Jimmies (sprinkles): For decorating the Halloween mini brownie bites.

- Mini Brownie Bites Pan: For baking the small bites.
- Halloween Party Picks: For topping the brownie bites.
- Halloween Candy: Can be used instead of party picks, like pumpkin candy corn.
- Piping Bag & Tip: For piping the frosting. A great alternative is a zip-top bag with one bottom corner snipped off.
📖 Recipe Steps
Make Mini Brownie Bites
Recipe Prep: Preheat oven to 350°F. Generously grease the wells of a 24-cavity mini brownie bites pan with butter. Set it aside.
- In a large mixing bowl, combine melted butter, sugar and vanilla. Stir to blend well.
- Add in eggs and mix well.
- Add in cocoa powder, salt and baking powder. Mix to combine. Add in the flour. Mix until fully incorporated. The batter should be smooth, but a few small lumps are okay.
- Divide the brownie batter evenly between the wells of the prepared pan.
- Bake for about 15 minutes, or until a toothpick inserted into the middle of 2 brownies comes out clean. Do not overbake. Allow brownie bites to shed heat in the pan until they can be easily removed. Transfer brownies to a wire rack. Let them cool completely.
🧑🏼🍳 Expert Tip: If the brownies don’t easily slip out of the pan, gently move a thin silicone spatula up and down around the edges of the brownies to help release them from the pan.
🥣 Make the Chocolate Frosting
- In the bowl of a stand mixer with the paddle attachment, beat the butter until light and creamy.
- Add the rest of the ingredients to the bowl. Start beating on low speed, gradually increasing the speed to high. Mix for approximately 2 minutes, or until the chocolate frosting is smooth and fluffy.
- For slightly thinner frosting, add a little more cream. For thicker frosting, add a bit more powdered sugar. The consistency should be thick enough to pipe onto the brownies.
- Transfer the chocolate frosting to a pastry bag with metal tip. Or use a zip-top bag with one corner snipped off.
👻 Decorate Halloween Mini Brownie Bites
- Once the brownie bites have cooled completely, flip the brownie bites upside down so the smaller end is facing up. Pipe on the frosting.
- Sprinkle the frosting with Halloween jimmies.
- Add a Halloween party pick to the top of each brownie bite.
How to Display Halloween Brownie Bites

As the cocoa nibs are processed, an alkaline solution is used to remove that naturally-occurring bitterness and acidity. This results in a darker-colored powder that has a nice mellow flavor. My preference is Hershey’s Special Dark Cocoa.

Ingredients
For Mini Brownie Bites
- 1/2 cup butter (1 stick), melted
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- 2 large eggs, room temperature
- 1/3 cup Hershey’s Special Dark Cocoa (or another Dutch process cocoa)
- 1/4 teaspoon kosher salt
- 1/4 teaspoon baking powder
- 1/2 cup all-purpose flour
For Chocolate Frosting
- 1 cup (2 sticks) butter, softened
- 3 1/2 cups powdered sugar
- 1/2 cup Hershey’s Special Dark Cocoa
- 3 tablespoons whipping cream (same as heavy cream)
- 1/4 teaspoon kosher salt
- 2 1/2 teaspoons vanilla extract
For Decorating
- Halloween jimmies/sprinkles
- Halloween party picks for topping the brownie bites (or use Halloween candy like pumpkin candy corn)
Instructions
Make Mini Brownie Bites

- In a large mixing bowl, combine the melted butter, sugar and vanilla. Stir to blend the ingredients together. Add eggs, one by one, mixing well after each addition. Measure the cocoa powder, salt and baking powder and add them to the bowl. Mix to combine. Add the flour and mix until fully incorporated.
- Divide the brownie batter evenly between the holes in the muffin tin.
- Bake for approximately 15 minutes or until a toothpick inserted into the middle of two different brownies comes out clean. Do not over-bake!
- Allow the brownie bites to cool in the pan until they can be safely removed and transferred to a wire rack. If the brownies do not easily slip out of the pan, gently move a thin silicone spatula up and down around the edges of the brownies to help release them from the muffin tin.
- Once the brownies have fully cooled, turn the brownies upside down and pipe frosting onto the bottoms. Sprinkle the frosting with Halloween jimmies. Insert a festive party pick into the center of each brownie.
