Lemon Yogurt Parfait

When I think of styling a fabulous Sunday brunch, festive lemon yogurt parfait come to mind. I love that they’re so quick and simple to make, but look like something special straight out of a magazine. To make these beautiful lemon yogurt parfait you’ll only need four ingredients: vanilla almond granola, vanilla flavored Greek yogurt, a fresh batch of lemon curd, and either Cool Whip or homemade whipped cream.
You can buy a jar of lemon curd at the market, or make a scrumptious batch of lemon curd from scratch. Find my quick and easy lemon curd recipe here. Although you can layer this lovely refreshing parfait any way you’d like, I made made mine with a base layer of granola followed by a layer of vanilla Greek yogurt with lemon curd on top. I like the way the sunshine reflects off the lemon curd and the rim of the glass dessert dish together so that’s why I chose to layer my lemon yogurt parfait in this way – with the lemon curd on top. For a quick finish, crown your lemon yogurt parfait with a generous dollop of Cool Whip.
To give my whipped cream a stylish-looking presentation, I used a size 2A round Wilton decorating tip . I simply cut one corner of a quart-size Ziplock freezer bag and slipped the decorating tip half-way through. Then I filled up the Ziplock with Cool Whip and swirled the tip around the top of the lemon yogurt parfait while squeezing the baggie. And that’s it. This literally took just a few seconds and voila! A cute finishing touch.
And if you want to get extra fancy and take things up a notch, you can create a simple garnish for your lemon yogurt parfait by putting a cocktail pick through a slice of lemon. Sometimes it’s just a few simple easy touches that can take a dessert from looking lovely to looking spectacular! Other wonderful garnish ideas include sprinkling the top of your lemon yogurt parfait with a tiny bit of shredded coconut or finely grated lemon zest, or artfully placing a long twisted piece of lemon zest across the top.
These easy breezy lemon yogurt parfait are perfect for brunches, holiday gatherings, wedding showers, baby showers, Father’s Day, Mother’s Day, or as a special breakfast treat! You can also serve lemon yogurt parfait as a dessert, or enjoy it as a late-night snack. What you’ll really love about these lemon yogurt parfait is that they can be made a day in advance and refrigerated until you’re ready to set them out for serving. This is especially helpful during the busy holiday season when you need to get a head start making several different menu items.
For baby showers and wedding showers, I would sprinkle the top of each lemon parfait with a few glittering edible gold stars. Now wouldn’t that look fabulous? If you’d like to include these darling lemon yogurt parfait as part of a large brunch menu, serve them in small, clear, plastic dessert cups
with mini wooden or plastic tasting spoons. They’ll tantalize your guests with their beauty, sparkle and shine! For piping Cool Whip or whipped cream onto a smaller surface, use a smaller Wilton decorating tip. Try a Wilton size 12, or a Wilton size 8.

Instructions
- In a glass dessert cup, layer the ingredients in this order: granola, yogurt and lemon curd.
- Top the lemon yogurt parfait with a generous dollop of Cool Whip. To get a bit fancy, use a Wilton 2A tip to pipe it on in a swirly fashion.
- Garnish with a slice of lemon propped up with a festive cocktail pick.
