During Hispanic Heritage month, we realize just how lucky we are to have family. And we’re making a point of enjoying traditional recipes like these Mexican blueberry waffles together.

For Hispanics, meal times are very important. It’s long-standing tradition for families to sit down at a table together and share a meal. And a meal is more than just about eating.

During breakfast we have conversations, sharing high and low points of daily life. All the little details that can otherwise slip away unmentioned. For us, it’s about building and sustaining relationships by taking the time to really connect in a meaningful way.

🛒 Ingredients

  • Corn Masa Flour: Find this ingredient in the Hispanic aisle of large supermarkets.
  • Granulated Sugar: Adds the perfect amount of sweetness to the waffle batter.
  • Kosher Salt: Balances the flavors of the other ingredients.
  • Baking powder: This leavening agent provides a lovely rise for the waffles.
  • Cornstarch: Helps produce light fluffy waffles while preventing sogginess.
  • Large Eggs: Provides stability for the batter while adding richness and moisture.
  • Gold ‘n Soft spread: Regular, not light. Feel free to use regular butter, if desired.
  • Mexican Vanilla Extract: Has a rich buttery taste and aroma. But feel free to use the type of vanilla extract you have on hand.
  • Whole Milk: Contributes richness and moisture. But 2% milk also works.
  • Fresh Blueberries: This berry is the star of our Mexican blueberries waffle recipe!

📖 Recipe Steps

RECIPE PREP: Preheat your waffle iron.

  • STEP 1: In the bowl of a stand mixer, add corn masa flour, sugar, salt, baking powder, cornstarch, eggs and egg whites, vanilla extract, milk, and Gold ‘n Soft spread. Mix until fully combined.
  • STEP 2: With a spatula, gently fold one cup of blueberries into the waffle batter.

  • STEP 3: Brush the grids of your waffle iron with a flavorless oil like canola.
  • STEP 4: Pour 3/4 cup to 1 cup of waffle batter onto the grids. I have a flip-style waffle iron with setting 1 to 8. The setting I use is between 3.5 and 4. It produces a fully-cooked light-brown Mexican blueberry waffle.

👩🏻‍🍳 Expert Tips

  • Never spray your waffle iron with non-stick cooking spray. It will damage the grids of your iron and leave behind a yellow gunky residue that’s almost impossible to remove.
  • Keep Mexican blueberry waffles warm in 200°F oven. It will not only keep them warm, but help keep them from becoming soggy. And when you’re done making the waffles, your family can sit down at the table together.
  • Make-Ahead Recipe: Make the waffle batter in advance, and refrigerate it for tomorrow.
  • For leftover waffles: Wrap them tightly in plastic wrap, between squares of parchment paper and refrigerate or freeze for later. When ready to enjoy, rewarm in a 350°F oven.

🧇 How to Serve Mexican Blueberry Waffles

  • Serve warm waffles with softened butter and your favorite syrup. Or sprinkle powdered sugar over the top and add a dollop of vanilla whipped cream.
  • Sprinkle additional fresh blueberries over the top. Or add a different berry like strawberries, blackberries or raspberries.
  • Mexican blueberry waffles can also be served as a “reverse meal” – breakfast for dinner!

Description

Hispanic Heritage month is the perfect time to focus on slowing down and spending more quality time around the table with our families. It’s about creating beautiful family traditions that will be handed down from generation to generation.


Ingredients

Units Scale
  • 2 cups corn masa flour*
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons baking powder
  • 1/4 cup cornstarch
  • 2 large eggs, white and yolk
  • 2 large eggs, whites only
  • 1/4 cup Gold ‘n Soft spread (regular – not light), or butter
  • 1 tablespoon vanilla extract
  • 1 1/2 cups milk
  • 1 cup blueberries
  • Optional Garnishes: Gold ‘n Soft spread or butter, powdered sugar, maple syrup, whipped cream, fresh berries

Instructions

  1. Preheat your waffle iron AND preheat your oven to 200 degrees.
  2. In the bowl of a stand mixer, combine corn masa flour, sugar, salt, baking powder, cornstarch, eggs, egg whites, Gold ‘n Soft, vanilla and milk. Mix until all ingredients are fully combined. The mixture will be smooth.
  3. With a spatula, gently fold the blueberries into the waffle batter.
  4. Spray the grids of your waffle iron with cooking spray, or brush the grills with tasteless vegetable oil. Cook the waffles according to the directions for your specific waffle iron.
  5. As you make the waffles, briefly store them in your warm oven. It will crisp them up a bit while evaporating moisture that might cause your waffles to become soggy. This will also keep your waffles warm until you’re done cooking all the waffles and are ready to serve them to your family and eat together.
  6. Garnish your waffles according to preference. Enjoy!

Notes

*Where to find corn masa flour: Look for it in the Hispanic section of large supermarkets. It can also be purchased at any authentic Mexican market.

Why we use cornstarch: It’s like a sprinkle of magic. It makes waffles of any type, regardless of recipe, light and fluffy while reducing sogginess.
