Mexican Wedge Salad


Festive Mexican wedge salad is beautiful, colorful and super tasty! Drizzled with delicious cilantro lime dressing, it’s a healthy dinner option for you and your family. You’ll absolutely love this quick simple recipe!


  • 1 head of Iceburg lettuce, quartered
  • Grape tomatoes
  • Colorful bell peppers (red, yellow, orange), chopped
  • Purple onion, chopped or sliced
  • Black beans
  • Kernels of corn – fresh or canned
  • Haas avocado, sliced
  • Mexican cheese (Queso Fresco or Cotija cheese), crumbled
  • Colorful tortilla strips
  • Creamy Cilantro Lime Dressing, homemade or store bought
  • Pepitas (roasted pumpkin seeds)
  • Salt and pepper to taste


  1. Begin by washing the head of Iceburg lettuce, removing any outer leaves as needed, and removing the core. Slice the head of lettuce into four quarters. Place each wedge on a salad plate. You can place each salad wedge on its side, or keep the wedges standing upright.
  2. Generously drizzle each wedge with homemade cilantro lime dressing.
  3. Sprinkle the wedge salad with black beans, kernels of corn, sliced or chopped purple onion, chopped bell peppers, your choice of crumbled Mexican cheese, and colorful tortilla strips. On one side of the wedge salad, decoratively fan out a few slices of avocado. Add a few grape tomatoes on the other side of the wedge salad.
  4. Serve your Mexican wedge salad with pepitas offered on the side. Each family member or guest can season their salads with salt and pepper to taste.
