When it comes to sharing my favorite recipes, you might have noticed that I’m all about preparing food that’s happy and festive. When I make baked goods and yummy rainbow Fruit Loop Treats, I love to do something that will make them sparkle and shine. These lovely rainbow fruit loop treats received a huge smile from my husband when he got home from work. They’re displayed on the kitchen counter on a cake stand covered with a tall glass dome. He’s looking forward to enjoying a rainbow Fruit Loop Treat – probably two – for breakfast tomorrow. My daughter Ashley just popped by and picked one up as she headed off to study for her law school classes.
I love that Ashley, now 25 years old, purchased a home just around the corner from us. The backyards of our 1/3 acre lots are so long that they actually connect along a common fence. At Ashley’s request my husband installed a gate to connect our two properties. But let’s head on back to this yummy recipe! If you’re ready to whip up a batch of rainbow Fruit Loop Treats for your family, these are all the ingredients you’ll need: Butter, mini white marshmallows, vanilla, salt, Fruit Loops cereal, mini rainbow marshmallows, a bar of white baking chocolate, and beautiful rainbow sprinkles.
Here’s how to make rainbow Fruit Loop Treats: Start by generously buttering the bottom and sides of a large rectangular baking dish. Butter two silicone spatulas and put them aside. (Go ahead and leave the butter out. In a few minutes you may want to butter up your hands when handling this Rice Krispy Treats spin-off.) In a large pot, melt the butter over medium heat. Add in vanilla and salt. Stir briefly to incorporate.
Add the mini white marshmallows to the pot and stir until all the marshmallows have melted. Keep the pot on the burner, but turn off the heat. Just like when making traditional Rice Krispy Treats, during the next few steps you’ll need to act quickly to avoid a big sticky mess!
Add the Fruit Loops cereal to the pot. Fold the Fruit Loops into the marshmallow mixture. The texture will be very sticky. As you lift your spatula it will look like the Fruit Loops are covered in cobwebs.
Quickly add the mini rainbow marshmallows to the mixture and fold them in. Like a bolt of lightening, use one of the pre-buttered spatulas to quickly transfer the mixture to the buttered baking dish. Start pressing down firmly with your spatula. Pack the rainbow Fruit Loop Treats into an even compacted layer.
If needed, add a bit of butter or cooking spray to your hands to prevent them from getting overly sticky. Making rainbow Fruit Loop treats is a messy but delicious process! Allow these unique Rice Krispy Treats to sit on your countertop in the baking dish so they can cool down and firm up. If there’s room in your freezer, you can stick them in there for about 15 minutes to speed things up!
With a sharp buttered knife, slice the treats into 8 even squares. Transfer the rainbow Fruit Loop Treats to a cooling rack. Place the cooling rack on top of a large baking sheet. When you drizzle white chocolate over the squares and sprinkle them with candy sprinkles, the mess will stay contained within the baking sheet.
Pull out a container of rainbow sprinkles. Just for now, set it aside.
Now it’s time to melt the chocolate. There are several different methods for melting white chocolate. So feel free to melt the white chocolate bar according to your own personal preference. I melted mine in the microwave. I started by snapping the bar of white chocolate into several small pieces. I placed the pieces in a microwave-safe dish and microwaved the chocolate on high for 30 seconds. I stirred the chocolate with a thin spatula then microwaved it for another 30 seconds. I stirred the chocolate again and found that there were still a few small lumps. So I microwaved the chocolate a bit more – in two 10-second increments, stirring after each – until the chocolate was fully melted and smooth.
Transfer the melted white chocolate to a quart-size Ziplock freezer bag. Snip a very small hole in one of the corners of the Ziplock. Squeeze the baggie over the rainbow Fruit Loop Treats in a zig-zag pattern. Just like sprinkling confetti, sprinkle the squares with the rainbow candy.
Ahhh…just look at these happy festive snacks! Aren’t they the cutest little things you ever did see?

Rainbow Fruit Loop Treats
Yield 8-16 Squares
- 5 tablespoons salted butter
- 2 teaspoons pure Mexican vanilla (or vanilla extract)
- 1/4 teaspoon sea salt
- 1 10-ounce bag of mini white marshmallows
- 7 cups Fruit Loops cereal
- 1 10-ounce bag mini rainbow marshmallows
- 1 white chocolate premium baking bar (4 ounces)
- Generously butter a large rectangular baking dish
- Butter two silicone spatulas
- Measure out all ingredients ahead of time - have them ready to go!
- Melt the butter in a large pot over medium heat. Add in the salt and vanilla. Stir.
- Add the white marshmallows to the pot. Stir until the marshmallows have completely melted.
- Add the Fruit Loops to the pot. Fold them into the marshmallow mixture. Keep the pot on the burner, but turn off the heat.
- Add the rainbow marshmallows to the pot and fold them into the mixture.
- Quickly transfer the sticky mixture to the buttered baking dish. Use the two buttered spatulas, and if needed, put a bit of butter or cooking spray on your hands. It's a messy process, but so worth it! Press down firmly with a spatula and your hands to compact the rainbow Fruit Loop Treats into one even layer. Allow the treats to sit on your countertop in the baking dish until they cool down completely. Or you can put the baking dish into your freezer for 15-20 minutes to speed up the process.
- Cut the rainbow Fruit Loop Treats into 8 squares. Transfer the squares to a cooling rack that's sitting on top of a cookie tray.
- Melt the white chocolate and transfer it to a Ziplock baggie. Cut a very small hole in one corner of the Ziplock. Pipe the chocolate onto the squares in a zig-zag pattern. Sprinkle the squares with candy confetti sprinkles. Enjoy!
