Street Tacos Fiesta Style | Perfect for Backyard Parties
When the weather heats up our family is ready to start hosting backyard parties! One of our favorite Mexico-inspired menus includes chicken street tacos fiesta style. A fabulous citrus marinade is what makes my chicken street tacos taste so darn scrumptious. Over the years I’ve been asked time and again for my secret recipe. Because we’re friends I’ll gladly share it with you here today.
This past weekend was our beloved Diesel Dog’s second birthday. And as a valued member of our family, Diesel Dog enjoyed a fun birthday celebration. My daughter Ashley organized a lovely party for Diesel which included a gluten-free cake for the doggies from a local bakery, and a cake for his human friends.

Chicken Street Tacos | Delicious Citrus Marinade
Whenever we’re prepping for a party it takes a village! While my husband was in the backyard checking chemicals in the swimming pool, setting up pop-up tents, tables and chairs, there was a lot of activity happening in the kitchen. Brooke and a friend were lovingly preparing ground beef patties for Diesel and his doggie friends. Ashley and a friend were slicing and dicing condiments. I was busy whipping up a delicious citrus marinade for chicken street tacos prepared fiesta style. The image below shows the quantity for one batch of marinade, enough to cover 6-7 chicken breasts (4 pounds of chicken). Our party for Diesel Dog required four times this amount!
In Mexico street tacos usually consist of double corn tortillas filled with chicken, beef or pork. Basic condiments include onions, cilantro, a variety of salsas, wedges of lime, and sometimes slices of radishes. Our version of street tacos includes these delicious toppings: onions, cilantro, sour cream, guacamole, lettuce, tomatoes, Mexican-blend cheese, Mexican Cojita cheese, salsa, and slices of lime. When you bite into chicken street tacos fiesta style it’s a literal party in your mouth! It’s a colorful explosion of complimentary flavors.
For my chicken street tacos I begin with a delicious grilled chicken citrus marinade. My husband then fires up the grill and cooks the chicken on our backyard BBQ. After the chicken is grilled it’s either thinly sliced for use with regular size corn tortillas, or it’s cubed for use with small corn tortillas that are specifically made for Mexican Street Tacos. We purchase these specialty 4-1/2-inch tortillas at a local Mexican market. But you can also purchase these authentic street taco corn tortillas online from Amazon.
For the event celebrating Diesel Dog’s 2nd birthday we really loaded up on scrumptious toppings! On each table we set out baskets of restaurant-style tortilla chips and salsa served in small molcajete-style bowls.
In Mexico street taco vendors serve their tacos on a plastic plate that is covered with a clear plastic disposable sleeve. After their customers have finished eating the plastic sleeve is stripped off and the plate is covered with a fresh clean sleeve. Here at our California home we serve our Mexican Street Tacos in festive red food baskets. We line the baskets with either wax paper deli sheets or with paper nacho boats. When a lot of toppings are involved the small paper boats handle the load a lot better!
When we serve chicken street tacos outdoors on a warm day, we pay careful attention to making sure the condiments and toppings are kept at proper temperature. Because our family does a lot of entertaining, I have five large restaurant-style chafing dishes available to use for this purpose. If I’m setting up the serving tables in advance of guest arrival, I’ll remove the shallow metal inserts and fill the deep pan with ice (the deeper pan is where you’d normally add hot water for hot foods). But when guests are already at my home and ready to eat as soon as the food is served, I just put the the condiment containers in the shallow stainless steel pan and put ice directly around the condiment containers. It looks visibly fresh and pretty and a bit more casual.
