It’s about building and sustaining relationships by taking the time to really connect with each other in a meaningful way.

What I love most about Hispanic traditions is how quickly and easily friends become family. When making introductions to new people, we lean in for a brief hug or squeeze, and a kiss on the cheek. Sometimes non-Hispanics are initially a bit surprised at the gesture, but usually warm up to it quickly! They understand that with this greeting we are immediately imparting that they’re welcomed and included. They’re no longer strangers. They’re now part of the family.
If close to meal time someone stops by our homes for an unexpected visit, it’s an automatic genuine response to invite them to sit down at our table and join us. We feel honored for the opportunity to share our meal with family, friends, neighbors, and even someone we’ve just met. This is an incredibly beautiful part of our culture. With love in our hearts and a humble spirit, we embrace others with open arms.
And when we’re sharing a delicious home-cooked meal with others, the general feeling is even more intimate. We’re sharing wholesome food that was made with our own hands, in our own kitchens, with a generous sprinkling of love. There’s just so much joy in that!
Today I’d like to show you how to make fabulous, tasty Mexican Blueberry Waffles. I used delicious, buttery-tasting Gold ‘n Soft Spread because it’s so incredibly convenient. It makes this special recipe for Mexican Blueberry Waffles quicker and easier to prepare than using standard butter. On busy days this quick-fix breakfast with Gold ‘n Soft Spread will allow you to spend more quality time with your family. You can even make the waffle batter a day in advance! Because like in every household during the busy work week, breakfast mealtimes are shorter than those in the evenings and on weekends. Everyone needs a healthy meal in their tummy before heading out the door to school and work, and beginning their day.
To make Mexican Blueberry Waffles start by pre-heating your waffle iron. Add corn masa flour (you’ll find this product in the Hispanic aisle of large grocery stores and at your local Mexican market), sugar, salt, baking powder, cornstarch, eggs and egg whites, pure Mexican vanilla (or vanilla extract), milk, and Gold ‘n Soft spread to the bowl of a stand mixer. What really speeds things up is the convenience of just scooping 1/4 cup of Gold ‘n Soft spread into the mixing bowl instead of having to stop and soften a cube of butter in the microwave. When preparing meals for our families on busy mornings, every second counts! Mix ingredients until fully combined.
With a spatula, gently fold one cup of blueberries into the waffle batter. Spray the grids of your waffle iron with a non-stick vegetable spray, or brush the grids with a flavorless oil. Depending on the size of your waffle iron, pour 3/4 cup to 1 cup of waffle batter onto the grids. I have a flip-stype waffle iron with setting selections 1 to 8. The setting I used to prepare these scrumptious Mexican Blueberry Waffles was between 3.5 and 4. This produces a fully-cooked light-brown waffle.
So your family can sit down and enjoy eating their Mexican Blueberry Waffles together, place the cooked waffles on a baking tray and briefly store them in a 200-degree oven. Not only does this crisp up the waffles just a bit more and keep them from getting soggy, but it allows them to stay warm until all of the waffles are done and can be served at the same time to everyone. Once you sit down, pass the Gold ‘n Soft and maple syrup around the table. Take a moment to feel gratitude for the love and friendship you share within your beautiful family.
In addition to flavorful Gold ‘n Soft butter and maple syrup, you can sprinkle a bit of powdered sugar over your Mexican Blueberry Waffles. This lovely combination of toppings is so darn scrumptious! Let me tell you, right now the breakfast scent in my kitchen is absolutely mouth-watering.

Mexican Blueberry Waffles
Yield 5 waffles
- 2 cups corn masa flour*
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 tablespoons baking powder
- 1/4 cup cornstarch**
- 2 large eggs, white and yolk
- 2 large eggs, whites only
- 1/4 cup Gold 'n Soft spread (regular - not light)
- 1 tablespoon pure Mexican vanilla (or vanilla extract)
- 1 + 1/2 cups milk
- 1 cup blueberries
- Garnishes: Gold 'n Soft spread, additional blueberries for garnishing, maple syrup, powdered sugar (confectioners sugar)
- Preheat your waffle iron AND preheat your oven to 200 degrees.
- In the bowl of a stand mixer, combine corn masa flour, sugar, salt, baking powder, cornstarch, eggs, egg whites, Gold 'n Soft, vanilla and milk. Mix until all ingredients are fully combined. The mixture will be smooth.
- With a spatula, gently fold the blueberries into the waffle batter.
- Spray the grids of your waffle iron with cooking spray, or brush the grills with tasteless vegetable oil. Cook the waffles according to the directions for your specific waffle iron.
- As you make the waffles, briefly store them in your warm oven. It will crisp them up a bit while evaporating moisture that might cause your waffles to become soggy. This will also keep your waffles warm until you're done cooking all the waffles and are ready to serve them to your family and eat together.
- Garnish your waffles according to preference. Enjoy!
*Corn masa flour can be found in the Hispanic grocery section of large supermarkets. It can also be purchased at authentic Mexican markets.
**HELPFUL TIP: Cornstarch is like a sprinkle of magic. It makes waffles of any type, regardless of recipe, light and fluffy while reducing sogginess. If you don't have cornstarch that's okay, your waffles will still be very delicious!
