Description

This delicious 10-minute recipe for Road Trip Snack Mix is ideal for busy families. In addition to enjoying it on road adventures, it’s also perfect for taking on hikes, for boating excursions, and camping trips.


Ingredients

  • 1 cup Pepperidge Farm® Goldfish® crackers Cheddar
  • 1 cup Pepperidge Farm® Goldfish® crackers Colors
  • 1 + 1/2 cups mini pretzels
  • 1 + 1/2 cups oyster crackers
  • 1+ 1/2 cups corn chips
  • 1 + 1/2 cups breakfast cereal squares
  • 1 + 1/2 cups taco seasoning mix
  • 1 cube of butter (1/2 cup)

Instructions

  1. Start by placing the Goldfish® crackers Cheddar, Goldfish® crackers Colors, mini pretzels, oyster crackers, corn chips, and breakfast cereal squares in a wide bowl. With clean hands or a spatula, gently mix these ingredients together.
  2. Place the cube of butter in a small heat-resistant bowl. Melt the butter in the microwave. Add the packet of taco seasoning to the butter and stir well to combine.
  3. Pull out a large microwavable bowl. With clean hands, transfer 1/6 of the cracker mixture to the large bowl. Drizzle some of the butter/seasoning over the snack mix. Gently toss everything together. Continue this process with the remaining ingredients to ensure the butter/seasoning is evenly spread throughout the snack mix. Microwave the snack mix for 5-6 minutes, stirring every 2 minutes just to prevent the seasoning from clumping onto individual pieces. The snack mix will become nicely crisp!
  4. Spread warm the snack mix in an even layer on a cookie sheet lined with a silicone mat, parchment paper or aluminum foil. Allow the snack mix to cool before transferring to a serving bowl, an airtight container, or portioning out the snack mix into individual snack-size zippered plastic bags.
