The first part of the holiday season we’ll spend here at home in California with our large extended family. The second half of the season we’ll be beachfront at our second home in Nuevo Vallarta, Mexico with friends. In California the weather’s chilly in the mornings and evenings, but in Puerto Vallarta the tropical weather is warm and inviting. Banderas Bay is on the same latitude as Hawaii, so these two locations share similar sunny weather.

Delicious Sparkling Pomegranate Rum Cocktails

In the front yard of our home we have a gorgeous, mature pomegranate tree that produces large red beautiful fruit. This tree was the inspiration for these sparkling pomegranate rum cocktails. Thinking of our homes here in California and across the border, I wanted to create yummy rum cocktails that would incorporate the unique vibe of both locales. So I turned to my husband for his assistance in developing these tasty, festive pomegranate rum drinks. He loves imagining beautiful drinks then bringing them to life!

I must admit, this past weekend we really enjoyed playing mixologists! My hubby loved mixing up yummy drink combinations and we both loved tasting them. And so it happened…in our kitchen at about 2 p.m. Pacific Standard Time, this must-have drink recipe for sparkling rum cocktails was born. We both laughed because as one of our favorite singers Jimmy Buffet would say, “it’s always 5 o’clock somewhere” – cocktail hour or happy hour! Mmmmm…Believe me, these flavorful rum drinks are destined to become your favorite holiday cocktails! Today I’ve given myself permission to sip on one of these blissful beauties as I write this post.

Ingredients for Pomegranate Rum Cocktails

These are all the ingredients you’ll need to make these spectacular rum drinks: ice, Malibu Caribbean Rum with Coconut Liqueur, 100% pure pomegranate juice, carbonated lemon/lime soda, fresh pomegranate seeds, red sugar for rimming the glasses, and sprigs of fresh rosemary for garnishing. These rum cocktails are the ideal adult beverages to serve at parties to those 21 years and older. They offer the perfect balance – just enough liquor to make guests happy and giggly, but not too much that their heads will start spinning.

How to Make Holiday Rum Drinks

Begin by rimming several 12-ounce cocktail glasses with red sanding sugar. Fill a saucer with enough sugar to coat the rims, and another saucer with a bit of rum. Dip the rims into the liquid and then into the sugar. Fill the glasses with ice. To each glass add 1/2 jigger (1 ounce) Malibu Caribbean Rum with Coconut Liqueur. Top that off with 2 jiggers (2 ounces) of pomegranate juice, and 2 jiggers (2 ounces) of carbonated lemon/lime soda. Gently stir your beautiful rum drinks with a cocktail stirrer. Sprinkle a few fresh pomegranate seeds on top. Garnish with a fresh sprig of rosemary. And there you have it. One of the most glamorous rum cocktails of the season!

My lovely Haus brand cocktail glasses were purchased at the Galerias Vallarta Shopping Mall in Puerto Vallarta, Mexico. But you can find a similar set online that will be perfect for serving your holiday rum drinks. Keep in mind that not all jiggers have the same measurements. The one I used is 1 ounce on one side, and 2 ounces on the opposite side. For rimming your glasses with red sugar, you can use a rimming plate similar to the one below.

Sparkling pomegranate rum cocktails are perfect for ringing in the most wonderful time of the year! From Thanksgiving to Christmas to New Years eve, these delicious rum drinks will carry you through the holiday season in style.


Ingredients

Scale
  • Red sanding sugar for rimming
  • Ice cubes
  • 1/2 jigger (1/2 ounce) Malibu Caribbean Rum with Coconut Liqueur
  • 2 jiggers (2 ounces) 100% pomegranate juice
  • 2 jiggers (2 ounces) carbonated lemon/lime soda
  • Fresh pomegranate seeds for sprinkling
  • Fresh sprigs of rosemary for garnishing

Instructions

  1. Rim a cocktail glass with red sanding sugar. Dip the rim of the glass into a saucer that has a bit of rum, then dip the wet-rim into the sugar. Gently twist the glass back and forth until the entire rim is covered in sugar.
  2. Fill the glass with ice cubes.
  3. Add the Malibu rum, pomegranate juice, and lemon/lime soda. Gently mix with a cocktail stirrer.
  4. Sprinkle fresh pomegranate seeds on top.
  5. Garnish with a fresh sprig of rosemary.
