I’m from California where tri-tip is highly popular! According to legend, this cut was first introduced to BBQ lovers in Santa Maria, CA. It was served on Mexican ranches during barbecue feasts for their vaqueros/cowboys. Tri-tip is a beloved part of California’s rich food culture and heritage.

ABOUT SIRLOIN STEAK: Sirloin is cut into top and bottom sections. Tri-tip is the triangular-shaped piece cut from the bottom section. Many Butchers call it “Santa Maria Steak” or “California’s Cut.” In the image above, the tri-tip has already been sliced into smaller pieces ready for grilling!

GARLIC BUTTER STEAK BITES INGREDIENTS

Garlic butter steak bites are easy to make with a few simple ingredients:

  • Beef steak
  • Worcestershire sauce
  • Steak sauce
  • Olive oil
  • Garlic powder
  • Oregano
  • Sea salt
  • Black pepper
  • Fresh cloves of garlic
  • Butter
  • Optional garnishes: Fresh Italian parsley and red pepper flakes

BEST STEAK MARINADE

It’s quick and easy to prep the steak bites and make a flavorful steak marinade! Just follow these simple step-by-step instructions:

  • STEP 1: Place the meat on a cutting board. Use a fork to pierce holes all over the beef on both sides. This will help the marinade to penetrate the beef.
  • STEP 2: With a sharp knife, cut the meat into bite-sized pieces.
  • STEP 3: In a small mixing bowl, add all the ingredients for the steak marinade. Whisk well to combine.
  • STEP 4: You’re now ready to marinate the steak bites!

HOW TO MARINATE STEAK

Place the cubed beef in a zip-top bag. Roll down the sides just a bit. This will give the plastic bag some stability when placed on your countertop.

Pour the marinade over the beef. Roll the sides of the bag back up, press out the air, and zip it closed. Massage the bag to distribute the marinade so all pieces of meat are nicely coated. Refrigerate 25 minutes to an hour.

GARLIC BUTTER STEAK BITES RECIPE

For grilling the beef cubes, we’ll be using a cast-iron pan. This is how to cook steak on the stove! We’ll sear the meat so it’s beautifully brown and crispy on the outside, while staying juicy and tender on the inside!

  • STEP 1: Place a heavy pan over medium/high heat. Add a light drizzling of olive oil to the pan. This will help prevent the beef cubes from sticking to the bottom.
  • STEP 2: Place beef cubes in a colander. Drain off the steak marinade. Working in batches, transfer steak bites to the sizzling hot skillet. Arrange them in a single layer. Sear the first side for 2 minutes until golden brown and crisp. Flip them over and sear the second side for 1-2 minutes. For food safety use a meat thermometer to test for doneness. Medium is 145°F. Medium-well is 150°F. Transfer cooked pieces to a bowl or plate.
  • STEP 3: Add butter and garlic to the pan. Saute the garlic for about 25 seconds or until fragrant. Remove skillet from heat.
  • STEP 4: Transfer the steak bites back to the pan. Gently toss them in the garlic butter mixture. Coat all pieces well.

HOW TO GARNISH BEEF CUBES

Just before serving, sprinkle the beef cubes with crushed red pepper flakes and freshly-chopped parsley.

    • USE A HEAVY CAST IRON SKILLET: No cast-iron pan? No problem! This beautiful round grill pan is perfect for this recipe. It’s nonstick surface makes clean-up easy!
    • A SIZZLING HOT SKILLET: We’re talking hot, hot, hot! This is the secret for searing the beef. We want the outside to develop a nice crispy crust while keeping the inside tender and juicy. When using a cast-iron pan, this can often be achieved over medium/high heat depending on your stovetop. When using other pieces of cookware, you may need to start the searing process over high heat.
    • QUICKER RECIPE FOR STEAK BITES: No time for marinating the meat? No problem! After cubing the beef sprinkle the entire batch of steak bites with with salt and pepper. Add oil to a hot skillet and start searing the beef!
    • SAVE THE PAN DRIPPINGS: If you’d like to use the flavorful drippings as a dipping sauce,  create a bit more of it by doubling the butter when you saute the minced garlic.

    Description

    These pan-seared steak bites are packed with flavor! On the outside they have a beautiful crispy crust. On the inside their middles are tender and juicy. Pair them with potatoes and salad for dinner. Serve them as steak appetizers for parties!


    Ingredients

    Scale
    • 2 pounds beef steak (tri-tip, top sirloin, ribeye or NY steak)
    • 1/2 cup worcestershire sauce
    • 1/2 cup steak sauce
    • 1/2 cup olive oil
    • 2 teaspoons garlic powder
    • 1 tablespoon dried oregano
    • 3/4 teaspoon salt
    • 1/2 teaspoon freshly-ground black pepper
    • 3 cloves of garlic, pressed or minced
    • 1/4 cup butter
    • Garnishes: crushed red pepper flakes and fresh Italian parsley (chopped)

    Instructions

    1. Using a fork, pierce both sides of the meat well. This will help the steak marinade to reach the center of the beef. Cut the meat into bite-sized cubes.
    2. In a small bowl, add all the ingredients for the steak marinade: worcestershire sauce, steak sauce, olive oil, garlic powder, oregano, salt and pepper. Whisk well.
    3. Add the beef cubes and steak marinade to a zip-top kitchen bag. Squeeze out the air and seal. Gently massage the bag to fully distribute the liquid. Marinate the steak bites in the fridge for 25 minutes to an hour.
    4. Use a colander drain off as much of the marinade as possible. Place a heavy skillet over medium-high heat. Add a short drizzling of olive oil. When the pan is sizzling hot, work in batches. Arrange the beef cubes in a single layer. Sear for about 2 minutes until golden brown and crispy. With tongs or a spatula, flip the steak bites over. Sear for another 1-2 minutes or until they reach desired doneness. For food safety, use a meat thermometer: 145°F for medium (warm red center).
    5. Transfer the steak bites to a bowl or plate. Add butter and garlic to the pan. Saute for about 25 seconds or until the garlic is fragrant. Remove from pan from heat. Add the cooked beef back to the skillet. Toss to distribute the garlic butter.
    6. Garnish with chopped Italian parsley and red pepper flakes.

  1. What did you use for “steak sauce” ? My husband loves Heinz 57. I do not, and would rather make my own. Any ideas?

    1. Hi Anne. I use A-1 Steak Sauce. But feel free to use whichever brand you like best! Or you can make a simple steak sauce at home in a medium saucepan on stovetop. Use your favorite recipe, or try stirring together: 1 cup ketchup, 2 tablespoons Worcestershire sauce, 2 tablespoons soy sauce, 2 tablespoons Dijon mustard, 2 cloves garlic (minced), 1/4 cup brown sugar, 1/4 cup apple cider vinegar, 1 teaspoon ground black pepper, 1 teaspoon onion powder, 1/2 teaspoon smoked paprika (optional), and 1/4 teaspoon cayenne pepper (adjust to taste). In the saucepan, bring the mixture to a simmer on stovetop over medium heat. Then reduce heat to low and let it simmer for about 15-20 minutes, stirring occasionally. Adjust the seasonings and sugar to taste. Allow the sauce to cool to room temperature.
