Feed your cheese craving with scrumptious Tex-Mex Cheese Quesadillas. There’s just so much to love about this popular Mexican recipe! Mmmm…Just look at that gorgeous melted cheese! I wish I could hand you a piece of this warm quesadilla right through your screen. Not only are quesadillas quick and easy to make, they’re also incredibly delicious and super satisfying. When paired up with other festive offerings, cheese quesadillas make a fabulous Cinco de Mayo appetizer, a quick snack or a hearty meal.

Ingredients for Tex-Mex Cheese Quesadillas

These are all the ingredients you’ll need to make festive, homemade Tex-Mex cheese quesadillas: store-bought or homemade flour tortillas, and your favorite type of shredded cheese. Seriously, that’s it! They’re awesomely simple. When making cheese quesadillas I like using medium cheddar cheese and Monterey Jack cheese, but I often like to mix things up by using Colby-Jack, Pepper Jack, or a pre-shredded Mexican blend. Gouda, Havarti, Muenster, or Mozzarella are also great cheese options! For individual servings, choose the smaller or standard-size tortillas. But when serving a crowd, use the larger burrito-size ones similar to those featured in my images of these amazing Tex-Mex cheese quesadillas.

How to Make Cheese Quesadillas

This is how to make delicious cheese quesadillas from scratch: using a traditional Mexican comal, a standard griddle or a large frying pan, begin by warming your tortillas on both sides. Sprinkle a generous amount of shredded cheese over the surface of the tortilla. Carefully fold the tortilla in half with the cheese in the middle. Allow the cheese quesadilla to continue warming on that first side. Then, with a heat-resistant spatula, flip the cheese quesadilla over to the other side so that the tortilla continues to warm up and the cheese inside starts melting. Flip the tortilla over once more. When the cheese is completely melted your cheese quesadilla is ready to garnish, serve and enjoy.

Healthy Garnishes for Tex-Mex Cheese Quesadillas

Now here’s where things get really fun! It’s time to select colorful garnishes for your yummy Tex-Mex cheese quesadillas. There are so many exciting options to choose from, but here’s what I serve with mine: Mexican pico de gallo (homemade or store bought), tantalizing guacamole, and yummy sour cream. If you love black olives, those are also a nice addition to this tasty Tex-Mex dish.

Tex-Mex Cheese Quesadillas – An Easy Appetizer or Snack

Growing up in a busy household, cheese quesadillas were a favorite go-to snack because they were quick and simple to make. We enjoyed them with either corn tortillas or homemade flour tortillas, but you can choose to mix things up by making yours with whole wheat tortillas instead.

Ingredients

INGREDIENTS – CHEESE QUESADILLAS

  • Flour tortillas, homemade or store bought
  • Shredded cheddar cheese
  • Shredded Monterey jack cheese

INGREDIENTS – HEALTHY GARNISHES

  • Pico de Gallo, homemade or store bought
  • Guacamole, homemade or store bought
  • Sour cream
  • Optional: black olives

Instructions

  1. On a Mexican-style comal, griddle or large frying pan, warm both sides of your flour tortilla over medium heat. If your tortilla starts browning too quickly, lower the heat to medium-low.
  2. Sprinkle a generous amount of shredded cheese over the surface of the tortilla. Fold the tortilla in half. Allow the cheese quesadilla to continue warming for a short while on that first side. With a heat-resistant spatula, flip the tortilla over to the second side. Keep an eye out for melted cheese. When you see that the cheese is almost completely melted, flip the tortilla over one last time. Once the cheese is nice and melted, as desired, your cheese quesadilla is ready to garnish and serve.
  3. Garnish your quesadilla with pico de gallo, guacamole, sour cream and black olives. Enjoy!

  2. I am currently staying in an Airbnb with limited cooking utensils. It has a gorgeous kitchen but very few pots and pans.
    But I have a fry pan and a hob….plus I had Colby Jack and sliced Pepper Jack in the fridge……So thank you.

  5. I agree totally perfect for cinco de mayo. Lol, however, when I was newly pregnant with my daughter I pretty much ate cheese quesadillas for breakfast for the first month or so and that’s what they always make me think of :-)
