👩🏻🍳 EXPERT TIPS FOR CHEWY COOKIES
Wondering how to make cookies chewy? Below are tips and tricks expert bakers use to achieve perfect cookies every time! It’s all about cookie chemistry, moisture content, and using the right products and methods.
Here’s how to make bakery cookies with a crispy edge and bendy center:
- BROWN SUGAR contains more moisture than granulated sugar. Instead of substituting all the white sugar for brown, use a combination of both.
- KARO® CORN SYRUP is the special ingredient our grandmothers used to achieve the texture and goodness of bakery-style cookies.
- EGG YOLKS provide fat to help make cookies bendy and chewy! If a cookie recipe calls for just one egg, add an extra yolk.
- MEASURE FLOUR PROPERLY: Fluff up the flour inside the container with a spoon. Sprinkle it into the measuring cup. Swipe a knife across the surface of the cup to level it out.

- COOKIE SHEETS + PARCHMENT PAPER: Dark-colored cookie sheets, or those with baked-on grease, produce cookies with crispy bottoms and gooey centers. For chewier cookies, use light-colored baking trays with low sides or no sides. Line them with parchment paper or silicone baking mats. It’s how I make chewy triple chocolate cookies!
- CHILL THE DOUGH: Stick the tray of scooped cookies into the freezer for 15 minutes, or into the fridge for 30 minutes. The fat in the cookies will begin to solidify reducing how much the cookies will spread while baking. This leads to a chewier cookie.
- OVEN TEMPERATURE + BAKING TIME The average chocolate chip cookie recipe suggests a baking temp of 375°F. For chewier cookies we want less moisture to evaporate while baking. Lower the temperature to 350°F. Reduce baking time by two minutes.
