These are all the ingredients you’ll need to make these homemade puff pastry cheese straws: 2 semi-defrosted sheets of puff pastry, virgin olive oil, oil from a jar of sun-dried tomatoes, fresh basil, sea salt, freshly-grated Parmesan cheese, finely grated sharp cheddar cheese, freshly-ground black pepper.

How to Make Cheese Straws

Here’s how to make easy cheese straws at home: begin by removing two sheets of puff pastry from the freezer. Place them on a lightly-floured pastry board or cutting board and let them begin to defrost. You only want them half-way defrosted as the colder they are the easier they’ll be to work with. Don’t try to force the sheets open. When you can unfold them with minimal effort they’re ready to be used.

Easy Cheese Straws Recipe

Adjust your oven rack to the center position. Preheat your oven to 375 degrees. Pull out a small bowl and a basting brush. In the small bowl, combine virgin olive oil, flavored oil from a jar of sun-dried tomatoes, sea salt and minced basil. This mixture is enough to use on both pieces of puff pastry. Work with only one sheet of puff pastry at a time. Unfold the first sheet and brush the entire surface with the flavored oil mixture.

Ingredient Substitutions for Cheese Straws Recipe

If you don’t have a jar of sun-dried tomatoes on hand, no problem! Just double the amount of virgin olive oil. If you don’t have either type of oil on hand, you can use an egg wash instead. Whisk one large egg with a tablespoon of water and then add in the minced basil and salt. The reason we need a basting mixture for this cheese straws recipe is to help the cheese stick to the dough. Otherwise, if no basting is done, a lot of the cheese will slip right off the dough when it’s time to twist it.

Puff Pastry Cheese Straws Recipe

Sprinkle half of the freshly-grated Parmesan cheese evenly over the sheet of puff pastry. Now sprinkle on a layer of finely-grated sharp cheddar cheese (reserve half of the cheese for the second sheet of puff pastry). Grind some black pepper all over this delicious creation. Place a piece of plastic wrap, parchment paper or waxed paper over the top of the dough. Use a rolling pin to press the cheese into the dough. At the same time, roll the dough into an 11-inch square. These measurements don’t have to be exact. In fact, if yours ends up being a 10 x 12-inch rectangle – that’s perfectly okay. No one will know!

With a pizza cutter, slice the dough into three equal parts. Slice each of those parts into three long strips. In total, each piece of pastry dough will make 9 tall cheese straws. One by one, turn the pieces over so the cheese side is facing down. Starting from the middle, twist both ends at the same time working your way outward. Transfer the strips to a baking sheet lined with parchment paper or a silicone baking mat. Bake the cheese straws for 12-14 minutes on the first side. Flip and continue to bake for another 2-3 minutes. While the cheese straws are in the oven keep a very close eye on them. They tend to brown quite quickly! Once out of the oven, transfer the crispy cheese straws to a cooling rack. If you leave them on the baking tray they may get a little soggy.

  • 3 tablespoons of seasoned oil from a jar of sun-dried tomatoes
  • 1 tablespoon fresh basil, minced
  • 1/2 teaspoon sea salt
  • 1/2 cup freshly-grated Parmesan cheese
  • 1 cup finely-grated sharp cheddar cheese (or another type of hard cheese)
  • Freshly-ground black pepper

Cover the dough with a piece of plastic wrap, parchment paper or waxed paper. Use a rolling pin to press the cheese firmly into the dough. At the same time, roll the dough out into an 11-inch square. These measurements don’t have to be exact. If yours ends up being a 10 x 12-inch rectangle – that’s absolutely fine!

One by one, turn the pieces over so the cheese side is facing down. This way, when you twist the dough, the cheese will be facing outward which looks much lovelier than if it’s facing inward. Starting from the middle, twist both ends at the same time working your way outward. Transfer the twisted strips to the lined baking sheet.
  5. Bake the cheese straws for 12-14 minutes on the first side. Flip and continue to bake for another 2-3 minutes.  Once out of the oven, transfer the crispy cheese straws to a cooling rack. If you leave them on the baking tray they may get a little soggy.
  6. As soon as the cheese straws are stiff and cooled they’re ready to be served!

    1. Hi Veronica. After cheese straws have cooled completely, arrange them inside an air-tight container or zip-top bag with all the air pressed out. Store them at room temperature for up to 1 week. When ready to enjoy, transfer straws to a baking tray. Rewarm in a 350°F oven to restore crispness.
