Air fryer breakfast potatoes are a delicious, hassle-free breakfast side. We use starchy potatoes, savory seasonings, and a touch of oil for potatoes that are crisp and crunchy on the outside and tender on the inside. The perfect breakfast side.
Ingredients
For Breakfast Potatoes
- 4 large russet potatoes, peeled and diced into 1-inch cubes
- 3 tablespoons canola oil (or light vegetable oil)
- 1 1/2 teaspoons kosher salt, or to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
For Garnishing and Serving (optional)
- Fresh Italian parsley, minced
- Flaky salt (like Maldon sea salt flakes)
- Ketchup, for serving
Instructions
Recipe Prep: Brush a small amount of canola oil on the inside of the air fryer basket to prevent sticking. Do NOT use non-stick cooking spray. It will damage your air fryer basket by forming a thick, sticky orange residue that’s hard to remove. Preheat air fryer to 400°F.
- In a large bowl, toss the cubed potatoes in canola oil. Make sure they’re well coated. Set the bowl aside.
- In a small bowl, combine: salt, garlic powder, onion powder, and black pepper. Sprinkle the seasoning mix over the potatoes, and toss until evenly coated.
- Add the potatoes to the air fryer basket. Don’t overcrowd the basket. If needed, air fry in batches so the potatoes can cook evenly and get nice and crisp.
- Air fry for 10 minutes. Shake the basket. Air fry for an additional 10 minutes.
- Transfer breakfast potatoes to a serving bowl. If desired, garnish with parsley and a pinch of flaky salt. Serve with ketchup as a dipping sauce. Enjoy immediately.
Notes
Expert Tip: For a flavorful twist, you can add other ingredients to the potatoes in the air fryer. Try bell peppers, onions, or even breakfast meats like sausage, ham or bacon.
