Description

These silver dollar pancakes are light, fluffy and tender. They almost melt in your mouth. Half the size of regular pancakes, they’re ideal for pairing with other breakfast favorites. They’re also perfect for children, and for smaller appetites. 


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 2 large eggs
  • 1 cup whole milk
  • 1 1/2 teaspoons lemon juice
  • 2 teaspoons pure vanilla extract
  • 1/4 cup salted butter, melted (plus more for greasing the griddle)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, salt, baking powder, and baking soda. In a medium bowl, mix the wet ingredients together: eggs, milk, lemon juice, and vanilla extract.
  2. Add wet ingredients to dry ingredients. Mix gently and briefly, until almost incorporated. Pour melted butter over the batter. Mix until just combined. Do not overmix. The batter will still have lumps, and that’s okay. Let the batter rest, uncovered, for 10 minutes.
  3. Heat a griddle to 350ºF over medium/low heat, until the surface is hot enough for droplets of water to skitter across the surface. Brush the griddle with a generous amount of melted butter.
  4. Using a tablespoon (from your measuring spoon set), ladle 2 tablespoons of batter onto the griddle. Cook for about 1 to 2 minutes, until bubbles rise to the surface and begin to pop, and the bottom of your pancakes are golden. Flip (just once) and cook for another 1 to 2 minutes longer.
  5. Serve straight off the griddle with butter and syrup, or your favorite toppings.

Notes

Secrets for fluffy pancakes:

  • Adding lemon juice to the pancake batter. It helps with the rise.
  • Not over-mixing the batter so the pancakes are light and fluffy, not thin and rubbery.
  • For an extra boost of fluffiness: Separate the eggs. Add in the yolks with the wet ingredients and mix until blended. Whip the egg whites with an electric hand mixer until stiff peaks form (the whites will stand up on their own). Then gently mix the egg whites into the batter.
