Fruit Pizza with Granola Crust

Description

We all know that eating plenty of fresh fruit is part of a healthy lifestyle. This beautiful fruit pizza with cream-cheese frosting and a homemade granola crust is a delicious way to serve nutritious fruit to your family.

INGREDIENTS – GRANOLA CRUST

  • 4 cups vanilla-almond granola
  • 2 + 1/2 tablespoons honey
  • 1 stick (8 tablespoons) salted butter, melted
  • 1 tablespoon pure Mexican vanilla (or vanilla extract)
  • 1 teaspoon ground cinnamon
  • 1/3 cup old-fashioned oats

INGREDIENTS – FROSTING + FRUIT TOPPINGS

  • 1 block (12 ounces) cream cheese, softened
  • 2 sticks (16 tablespoons) salted butter, softened
  • 2 teaspoons pure Mexican vanilla (or vanilla extract)
  • 2 + 1/2 cups powdered sugar (confectioners sugar)
  • 1/2 teaspoon lemon juice
  • Variety of fresh fruit
  • Optional: 1 can of apricot cake and pie filling for glossing over the fruit

Instructions

DIRECTIONS – GRANOLA CRUST

  1. Preheat oven to 350 degrees.
  2. Add granola to the bowl of a food processor. Pulse until granola is finely ground.
  3. Add in the honey, melted butter, vanilla, ground cinnamon and oats. Continue pulsing until all ingredients are fully combined and the mixture is well ground.
  4. With a spatula, transfer the granola crust mixture onto a round pizza stone or pizza tray. With clean hands and a spatula, firmly compact the granola mixture while creating a round crust. If needed, drizzle a tiny bit of honey in any areas that aren’t holding together well.
  5. Bake the granola crust for 12 minutes or until the crust is very lightly browned around the edges. Remove the crust from the oven and allow it to fully cool off.

DIRECTIONS – FROSTING + FRUIT TOPPINGS

  1. In the bowl of a stand mixer, add the softened cream cheese, softened butter, vanilla, powdered sugar, and lemon juice. Cream the ingredients until the mixture is well blended and smooth.
  2. With a spatula, spread the cream-cheese frosting in an even layer over the cooled granola crust.
  3. In a creative manner, arrange a variety of fruit slices and pieces on top of the scrumptious frosting.
  4. Optional: To give your fruit pizza a delightful shimmery look, press a few spoonfuls of apricot cake and pie filling through a small mesh strainer. With a pastry brush, gently and very sparingly, spread a bit of the strained apricot filling over the fruit topping.
  5. You can enjoy your fruit pizza immediately! Or refrigerate your fruit pizza until it’s ready to be served.
