Before we begin, let’s get your creative juices flowing! This delicious fruit pizza sports a fabulous granola crust, but you can make fruit pizza with different types of crusts. Here are some ideas: Spread sugar cookie dough over a pizza pan in the shape of a round disk to create a giant cookie pizza crust. Just bake the giant cookie before proceeding with this fruit pizza recipe. You can also make a homemade graham cracker crust for your fruit pizza. And if you’re thinking about using an Oreo Cookie Crust – woo-hoo! That would be extremely tasty.

Fruit Pizza with Granola Crust

Alrighty. Let’s get this fruit pizza started! To make a quick and easy granola crust, start by adding your favorite granola to the bowl of a food processor. My favorite is vanilla-almond granola, so that’s what I’m using here.

Pulse until the granola is finely ground.

Add in honey, melted butter, pure Mexican vanilla (or vanilla extract), and ground cinnamon. Pulse briefly to combine the ingredients together.

Add in the oats and pulse until the mixture is completely ground. That’s it. That’s all there is to it. Your granola mixture is now officially ready to become a gorgeous granola crust! Adjust your oven rack to the middle position, and preheat your oven to 350 degrees. Now head over to your kitchen cabinet and pull out a large round pizza pan or a pizza baking stone. Either one is perfect for this fruit pizza recipe.

With a spatula, transfer the granola crust mixture from the bowl of the food processor onto your pizza pan or baking stone. The mixture will look crumbly until it’s compacted together.

Using a combination of your clean hands and a spatula, start pressing the mixture together very tightly. As you compact the granola crust, form it into a round circle. Surprisingly, this is very easy to do without much effort.

If there happens to be a small area that isn’t holding together well, just dribble a tiny bit of honey over it and press it directly into the crust. Everything will now hold together nicely!

Bake your granola crust for 12 minutes or until the edges become just slightly golden brown. Remove the crust from the oven and allow it to cool down completely.

In the bowl of a stand mixer, blend together the cream cheese, two sticks of softened butter, vanilla, powdered sugar, and lemon juice. The final mixture should be creamy and smooth.

With a clean spatula, spread the cream-cheese frosting evenly over the cooled granola crust. Before heading to the kitchen sink to soak your mixing bowl and beater, lift a bit frosting off these kitchen tools with your finger to have a quick taste of this deliciousness. Mmmmm…. If you’d like, go ahead and have a second taste.

Now here comes the fun part of making a fruit pizza! Layer slices and pieces of your favorite fresh fruits directly on top of the yummy frosting. Feel free to get super creative with your fruit pizza pattern. It’s just like composing a beautiful piece of art! Every single fruit pizza will be lovely and unique, just like you.

The types of fresh fruit I used for my fruit pizza included strawberries, kiwi, blueberries, mandarin oranges, pineapple, raspberries and blackberries. You can use bananas, mangos, and a light sprinkling of coconut. When it comes to selecting toppings for your fruit pizza, the sky’s the limit!

Today I decided to enhance the look of my fruit pizza by giving it a shimmery bakery-style glow. It’s really easy to do. Just open a can of apricot cake and pastry filling and press the contents through a small mesh strainer.

Before proceeding, taste a bit of the apricot pastry filling to make sure you absolutely love the flavor, as this taste will be covering the other types of fruit on your pizza. If you agree that it’s yummy, use a pastry brush to just lightly spread a bit of apricot pastry filling over the fresh fruit. I’m careful to use just a tad of the apricot so the taste doesn’t overpower my luscious fruit pizza.

INGREDIENTS – GRANOLA CRUST

  • 4 cups vanilla-almond granola
  • 2 + 1/2 tablespoons honey
  • 1 stick (8 tablespoons) salted butter, melted
  • 1 tablespoon pure Mexican vanilla (or vanilla extract)
  • 1 teaspoon ground cinnamon
  • 1/3 cup old-fashioned oats

INGREDIENTS – FROSTING + FRUIT TOPPINGS

  • 1 block (12 ounces) cream cheese, softened
  • 2 sticks (16 tablespoons) salted butter, softened
  • 2 teaspoons pure Mexican vanilla (or vanilla extract)
  • 2 + 1/2 cups powdered sugar (confectioners sugar)
  • 1/2 teaspoon lemon juice
  • Variety of fresh fruit
  • Optional: 1 can of apricot cake and pie filling for glossing over the fruit

Instructions

DIRECTIONS – GRANOLA CRUST

  1. Preheat oven to 350 degrees.
  2. Add granola to the bowl of a food processor. Pulse until granola is finely ground.
  3. Add in the honey, melted butter, vanilla, ground cinnamon and oats. Continue pulsing until all ingredients are fully combined and the mixture is well ground.
  4. With a spatula, transfer the granola crust mixture onto a round pizza stone or pizza tray. With clean hands and a spatula, firmly compact the granola mixture while creating a round crust. If needed, drizzle a tiny bit of honey in any areas that aren’t holding together well.
  5. Bake the granola crust for 12 minutes or until the crust is very lightly browned around the edges. Remove the crust from the oven and allow it to fully cool off.

DIRECTIONS – FROSTING + FRUIT TOPPINGS

  1. In the bowl of a stand mixer, add the softened cream cheese, softened butter, vanilla, powdered sugar, and lemon juice. Cream the ingredients until the mixture is well blended and smooth.
  2. With a spatula, spread the cream-cheese frosting in an even layer over the cooled granola crust.
  3. In a creative manner, arrange a variety of fruit slices and pieces on top of the scrumptious frosting.
  4. Optional: To give your fruit pizza a delightful shimmery look, press a few spoonfuls of apricot cake and pie filling through a small mesh strainer. With a pastry brush, gently and very sparingly, spread a bit of the strained apricot filling over the fruit topping.
  5. You can enjoy your fruit pizza immediately! Or refrigerate your fruit pizza until it’s ready to be served.
