Description

Pumpkin pie overnight oats is a healthy, delicious fall breakfast. Assemble this easy recipe in just 5 minutes, then refrigerate overnight. Overnight oats keep well in the fridge up to 5 days, so they’re perfect for weekly meal prep.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup canned pumpkin puree
  • 1/2 cup plain Greek yogurt
  • 1/2 whole milk
  • 2 tablespoons maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 pinch kosher salt (to taste)
  • Optional Garnishes: vanilla whipped cream, chopped pecans or walnuts, maple syrup, honey, mini chocolate chips, etc.

Instructions

  1. In a mason jar or airtight container, stir together the rolled oats, pumpkin puree, Greek yogurt, milk, maple syrup, pumpkin pie spice, and vanilla extract.
  2. Do a taste test. Add a pinch of kosher salt to balance the flavors.
  3. Refrigerate the pumpkin spice oatmeal overnight, or for at least 4 hours.
  4. Stir the mixture. Garnish your overnight oats as desired.

Notes

Wait to add crunchy add-ins until the overnight oats are ready to eat. If you add crispy items in advance, to save time, they’ll end up softening in the liquid and you’ll end up with a mushy mess or a texture that’s not too pleasant.
