  2. Form the meat into 6 sausage patties that are slightly larger than an English muffin. The sausage patties will shrink during cooking.
  3. Add canola oil to a large non-stick skillet over medium-high heat. Swish the pan around to distribute the oil. Add 3-4 sausage patties. Cook for 2-3 minutes, then flip the patties over. Continue cooking until both sides are brown and the pork is cooked through. Transfer to a paper-towel lined plate to drain.
  4. Place the sliced muffins on a baking tray. Toast in the oven as desired. Add slices of cheese to the bottom half of each muffin. Return to the oven until the cheese melts.

Cook the Eggs

  1. Crack the eggs into ramekins. (It’s important to have the eggs cracked and ready to go so the they can be poured into the eggs rings at the same time.)
  2. Heat 1 tablespoon oil in a large frying pan. Spray the egg rings with oil. Place greased rings flat against the bottom of the pan.
  3. Work quickly. Add a cracked egg into each ring. With a fork, burst the yolks so the eggs cook evenly. Drizzle a few tablespoons of water around each egg ring. Immediately cover pan with a lid. Allow the eggs to steam for about 2 minutes, or until desired doneness.

This recipe calls for thinner patties similar to the McDonald’s Sausage Egg McMuffin. One pound of meat is enough for 6 of these thin sausage patties. If you prefer thicker portions, divide the meat into 4 portions.

Try pan-fried slices of Canadian bacon, or thick-sliced bacon cooked until crisp. Or instead of using pork sausage patties, use patties made with ground chicken or ground turkey.

For Sausage Egg McMuffins similar to McDonald’s (they use processed cheese), use American cheese. But for a much better flavor, use medium cheddar cheese. I buy a package of pre-sliced Tillamook cheese at Costco.

Use lean ground pork for the sausage patties. Or substitute the pork with ground chicken or turkey. Cut back on the amount of salt used in the meat mixture. Make the eggs with whites only, no yolks. Use whole-grain or whole-wheat English muffins. Don’t butter the toasted muffins.

Note: To save time, instead of making the sausage patties from scratch with the ingredients below, feel free to use store-bought Jimmy Dean (heat & serve) sausage patties. 

  • 1 pound ground pork
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1/2 tablespoon fennel seeds
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Optional: 1 tablespoon brown sugar or maple syrup, for a touch of sweetness (McDonald’s uses dextrose)
  • 1 tablespoon canola oil, for cooking

For the Egg McMuffins

  • 6 English muffins, sliced in half
  • Butter (optional), for spreading
  • 6 large eggs
  • 6 slices cheddar cheese or American cheese
  • 1 tablespoon vegetable oil or butter
  • Water, for steaming the eggs

Instructions

RECIPE PREP: Preheat oven to 350°F. Line a plate with paper towels.

Make the Sausage Patties

  1. Place the sliced muffins on a baking tray. Toast in the oven as desired. Remove the top halves of the muffins from the tray.
  2. Add slices of cheese to the bottom half of each muffin. Return to the oven until the cheese melts.

Cook the Eggs

  1. Crack the eggs into small ramekins. It’s important to have the eggs ready to go – so they can be poured into the egg rings at about the same time.
  2. Heat 1 tablespoon oil or butter in a large frying pan. Grease the egg rings with oil. Place greased rings flat against the bottom of the pan. Work quickly. Add a cracked egg into each ring. With a fork, burst the yolks so the eggs can cook evenly. Season with salt and pepper to taste.
  3. Drizzle a few tablespoons of water around each egg ring. Immediately cover the pan with a lid. Allow eggs to steam for about 2 minutes, or until desired doneness.
