Mint chocolate chip cookies are perfect for St. Patrick’s Day and all year round. These scrumptious triple chocolate cookies are fabulously chewy with tender soft middles. A freshly-baked batch are a chocolate lover’s dream!
ABOUT MINT CHOCOLATE CHIP COOKIES
In 1937, when Ruth Wakefield of Whitman, Massachusetts, chopped up blocks of chocolate and added the chunks to her favorite cookie recipe, she created a baking sensation!
After serving chocolate chip cookies at the Toll House Inn, word of her unique creation spread. A chocolate manufacturer contacted Ruth and they struck a deal.
Ruth’s chocolate chip cookie recipe would be listed on the company’s brand packaging. Her compensation: a lifetime supply of chocolate!
Four years later, chocolate morsels were introduced on the market. Over the years a variety of new flavors have been developed by various manufacturers, including green mint chips – the kind that I use for these lovely mint chocolate chip cookies!
INGREDIENTS FOR MINT COOKIES
Homemade chocolate chip cookies are easy to make with a few basic ingredients:
- Good-quality butter
- Granulated sugar
- Light brown sugar
- Large eggs
- Pure vanilla extract
- Peppermint extract
- Natural unsweetened cocoa powder
- All-purpose flour
- Baking soda
- Salt
- Mint chocolate chips
- Milk chocolate morsels
HOW TO MAKE MINT CHOCOLATE CHIP COOKIES
Skill level for this cookie recipe: beginner.
- STEP 1: Preheat oven to 350 degrees F. In the bowl of stand mixer, cream butter and sugar together.
- STEP 2: Add eggs, vanilla, and peppermint to the bowl. Mix until combined.
- STEP 3: In a separate bowl, mix together the flour, cocoa, baking soda and salt.
- STEP 4: Add the dry ingredients to main mixing bowl. Mix until fully incorporated. The rich chocolate dough is now ready for the morsels to be stirred in!
CHOCOLATE CHIP COOKIE RECIPE
- Add the two types of morsels to the cookie dough: milk chocolate chips and mint chips. This flavor combination is what makes these homemade chocolate chip cookies extra special!
- Line a baking tray with parchment paper or a silicone baking mat.
- With a medium cookie scoop, form the cookie dough into little balls. Place them on the tray. Leave about 2-1/2 inches of space between each cookie.
- Bake chocolate mint cookies for 8-10 minutes.
EXPERT BAKING TIP
Because of their deep rich color, it can often be hard to tell when chocolate cookies are actually done baking. If eight minutes have passed, the dough has spread, and the morsels are melted, this is a good indication of doneness.
In my opinion, it’s always better for cookies to be just slightly under-baked. They’ll get harder and more solid as they cool.
- Remove cookies from the oven.
- For a stunningly beautiful presentation, press a few additional morsels into the top of each cookie while they’re still piping hot.
- Allow cookies to remain on the baking tray for about 10 minutes, or until they’re solid enough to lift with a spatula and transfer to a cooling rack.
HOW TO ENJOY HOMEMADE CHOCOLATE CHIP COOKIES

HOW TO FREEZE CHOCOLATE CHIP COOKIE DOUGH

- STEP 1: Line a baking tray with parchment paper.
- STEP 2: Use a cookie scoop to form rounded pucks. Place the balls of cookie dough on the parchment paper leaving about 1/4 of an inch between each piece.
- STEP 3: Place the cookie sheet into the freezer for about 3 hours or until solid.
- STEP 4: Remove the tray from the freezer. Transfer the preformed cookie dough to a zip-top bag. Another option: select a freezer-safe container with a solid bottom, and layer the cookie dough inside the container using sheets of parchment paper to divide the layers. Return the cookie dough to the freezer!
HOW TO BAKE FROZEN CHOCOLATE CHIP COOKIE DOUGH
It’s easy to bake frozen cookie dough. There’s no need to thaw out the preformed pieces before baking!
- STEP 1: Adjust oven rack to the center position. Preheat oven to 350 degrees F.
- STEP 2: Line a cookie sheet with a silicone baking mat or parchment paper.
- STEP 3: Place the pieces of preformed frozen cookie dough on the lined tray. Leave about 2-1/2 inches of space between each.
- STEP 4: Bake chocolate chip cookies for 10-14 minutes, or until lightly golden.

Ingredients
- 1 cup butter (2 sticks)
- 1 cup granulated sugar
- 1/2 cup light-brown sugar
- 2 large eggs, room temperature
- 2–1/2 teaspoons pure vanilla extract
- 1/4 teaspoon peppermint extract
- 2/3 cup cocoa powder, natural unsweetened
- 2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mint chocolate chips (plus more for garnishing)
- 1 cup milk chocolate morsels (plus more for garnishing)
Instructions
- Heat oven to 350 degrees F. Line a cookie sheet with a silicone baking mat or parchment paper.
- In a large mixing bowl, cream the butter and sugars together. Add eggs, vanilla extract, and peppermint extract. Mix until blended.
- In a medium bowl, use a spatula to mix together the cocoa, flour, baking soda and salt. Add the dry ingredients to the wet ingredients. Mix until fully incorporated.
- Stir in the mint chips and chocolate chips. With a cookie scoop, add rounded spoonfuls of dough to the cookie sheet. Leave about 2-1/2 inches of space between the cookies.
- Bake for 8-10 minutes. Remove cookies from oven. If desired, press additional mint and chocolate morsels into the top of each cookie. Allow cookies to cool on the tray for 10 minutes or until they can be easily transferred to a cooling rack.
