🥣 easy ingredient substitutions

Missing an ingredient for these crispy pasta chips? Don’t put on your shoes and head to the market. Instead, head to your fridge or pantry. Check for these easy ingredient swaps.

It’s convenient and money-saving to use ingredients you already have on hand!

  • BOWTIE PASTA: Try a pasta like rigatoni, penne or ziti.
  • OLIVE OIL SPRAY: If desired, fill a reusable spray bottle with olive oil, or just use olive oil straight from a bottle. Another option: use your favorite cooking oil spray, like canola oil, but NOT a non-stick baking spray.
  • PARMESAN CHEESE: Try Asiago cheese, Pecorino Romano, Gouda or fontina. Any cheese that grates well is a good substitute.
  • GARLIC POWDER: Eliminate the sea salt and use garlic salt instead. I do not recommend using fresh garlic for this recipe, as the taste would be too overpowering.

📖 RECIPE STEPS

Recipe prep for both cooking methods, oven/bake and air fryer, start out the same. We first cook the noodles on stovetop.

RECIPE PREP: Boil pasta in heavily salted water that tastes like the ocean, cooking al dente according to package directions. Drain in a colander. Rinse under cold water. Shake colander to remove as much water as possible. Spread pasta in an even layer on a baking tray. Pat dry with a lint-free towel.

OVEN/BAKING INSTRUCTIONS

RECIPE PREP: Adjust oven rack to center position. Preheat oven to 400°F. Line a large baking tray with parchment paper.

  • STEP 1: Transfer cooked pasta to a large mixing bowl. Spray or drizzle with olive oil. Mix well to coat all pieces. This will prevent noodles from sticking together, and help them crisp up in the oven.
  • STEP 2: Add sea salt. Toss well to distribute the spice. Arrange noodles in a single layer on prepared baking tray.
  • STEP 3: Bake 20 minutes, or until the entire batch is golden blonde and crisp, flipping and stirring the noodles once or twice during baking.
  • STEP 4: Remove from oven. If desired, grind black pepper over the noodles. Transfer pasta chips to a serving bowl. Sprinkle with garlic powder and parmesan cheese. Toss to combine. If desired, garnish with Italian parsley. Serve with marinara dipping sauce.

👩🏻‍🍳 AIR FRYER INSTRUCTIONS

  • STEP 1: Transfer cooked pasta to a large mixing bowl. Spray or drizzle with olive oil. Mix well to coat all pieces. This will prevent the noodles from clumping together, and will help them crisp up in the air fryer.
  • STEP 2: Add sea salt to the bowl. Toss well to distribute the spice. Transfer pasta to the air fryer basket.
  • STEP 3: Air fry at 400°F for 10 to 12 minutes, or until pieces are golden blonde and crisp. During air frying, shake the basket a few times to redistribute the pieces. We want all the surfaces to get nice and crisp.
  • STEP 4: Transfer pasta chips to a serving bowl. If desired, grind black pepper over the top. Sprinkle with garlic powder and parmesan cheese. Toss to combine. Optional: garnish with Italian parsley. Serve warm or at room temperature with a side of your favorite dipping sauce.

KITCHEN SMARTS: If using an XL air fryer you can make these pasta chips all at once or in 2 batches. For smaller units, air fry noodles in multiple batches.

🧑🏼‍🍳 RECIPE FAQ

These are the most commonly asked questions when making pasta chips, and the most helpful answers for recipe success.

DO PASTA CHIPS DELIVER A HARD TOOTHY BITE?

No. It’s not like biting into hard uncooked pasta. The pieces are cooked on stovetop before being crisped up in the oven or air fryer. Taste and texture is similar to crispy edges of baked rigatoni, manicotti or lasagna.

BEST PASTA SHAPES TO USE?

For pasta chips, we want a noodle with a nice sturdy surface. Once cooked, this appetizer should be easy to pick up with your fingers and dip into a sauce. Try bowtie pasta, penne pasta, rigatoni, ziti, or lasagne noodles snapped into pieces.

CAN I USE GLUTEN-FREE PASTA FOR THIS RECIPE?

Yes. Pasta chips can definitely be made with gluten-free pasta. For great results, try a brown rice gluten-free pasta.

IDEAS FOR HERBS AND SPICES FOR PASTA CHIPS?

Freshly-ground black pepper, garlic powder, onion powder, oregano, basil, Italian seasoning, and Italian parsley. For a little heat, try a pinch of cayenne or red pepper flakes.

IS THERE A DAIRY-FREE OPTION FOR PARMESAN CHEESE TOPPING?

Yes. Try nutritional yeast. It’s a flaky powder with a cheese-like taste. Or use a dairy-free parmesan cheese. This product can be found at most large grocery stores.

WHAT DIPPING SAUCES PAIR WELL WITH PASTA CHIPS?

Buttermilk ranch dressing, marinara sauce, honey mustard sauce, bang bang sauce, tzatziki sauce and sweet and sour sauce.

ARE PASTA CHIPS A MAKE-AHEAD RECIPE?

Pasta chips are at their prime when enjoyed right after cooking, but this snack does well when stored in an air-tight container. For best results, make the chips and let them cool. Immediately transfer to a zip-top freezer bag with the air pressed out. Store on the counter up to 3 days.
