🥣 Recipe Prep: Cook the Pasta

  1. Fill a pasta pot with water. Salt the water well – it should taste like the ocean. Cook the spaghetti al dente (firm to the bite) according to package instructions. Do not over cook the noodles or they can become mushy when mixed with the other ingredients.
  2. Drain the pasta in a colander, and rinse it under cold water to stop the cooking process. Allow the noodles to cool completely.

Expert Tip: To cool the pasta quickly, spread it in an even layer on a baking tray.

  2. Add the cooked and cooled spaghetti to a large salad bowl. Drizzle the Italian dressing over the spaghetti, adding as much as you’d like. Toss well to coat the noodles evenly.
  3. Add the halved cherry tomatoes, sliced black olives, sliced red onion, bell pepper, and zucchini to the bowl. Toss everything together until well combined.
  4. Cover the bowl and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together. When ready to serve, mix in the grated Parmesan cheese. Do a taste test. If needed, add a pinch of salt and pepper to taste. Then sprinkle the top of the salad with fresh Italian parsley.

🧑🏼‍🍳 Recipe FAQ

Yes, you can use other types of pasta such as penne, fusilli, or rotini. However, spaghetti works well because its long shape allows the dressing to coat each strand evenly.

Rinsing the spaghetti under cold water after cooking stops the cooking process and helps prevent it from sticking together. It also cools down the pasta quickly, which is essential for a cold salad. However, if you prefer your pasta warmer, you can skip this step.

Absolutely! Feel free to add your favorite vegetables to the salad, such as broccoli or spinach, or cucumbers instead of zucchini. Just make sure to chop them into bite-sized pieces for easy eating.

Absolutely! You can use gluten-free spaghetti or any other gluten-free pasta variety to make this salad suitable for those with gluten intolerance or sensitivity.

Yes, you can easily make this salad vegan by omitting the optional crumbled feta cheese or using a vegan cheese alternative. Ensure that all other ingredients are vegan-friendly.

Cold spaghetti salad pairs well with grilled meats, seafood, or tofu. It also makes a great side dish for sandwiches, burgers, or wraps. Additionally, you can enjoy it on its own as a light and refreshing meal.

Cold spaghetti salad can be stored in an airtight container in the refrigerator for up to 3-4 days. Make sure to give it a good toss before serving to redistribute the dressing and flavors.

📝 Expert Tips

  • Cook the spaghetti al dente. We want to make sure it can maintain its texture and does not become limp when mixed with the dressing.
  • Don’t overdress the salad: Start by adding a little dressing to the spaghetti and toss well. Add more dressing gradually, tasting as you go, until the noodles are evenly coated but not swimming in dressing. This prevents the salad from becoming soggy and allows the flavors to shine through.
  • Add Parmesan cheese just before serving: This prevents the cheese from becoming soggy and ensures a fresh texture.
  • Customize the cold spaghetti salad to taste: Feel free to add your favorite ingredients such as different vegetables, herbs, or proteins – like chunks of Italian salami. Make this dish your own by experimenting with the flavors and textures that you enjoy.
